I love finding new healthy recipies to try, I love to make vegan and vegetarian dishes. One of my favorite bloggers, Anna-Noel, has done a few blog post called “Weekly Eats” and I love them reading them. I decided I would try it out and share what I eat during the week.
I had a simple vegetarian pasta dish for lunch this day. It was pasta covered in Earth Balance Olive Oil Buttery Spread, topped with avocado, tomato, red bell pepper, and Italian seasoning.
I made an acai bowl this morning and it was super good. The base was 3 frozen banans, a packet of acai and water. I topped it with Shredded coconut, melted peanut butter, granola from a local store, and chocolate chips.
For Dinner this nice I had white rice, with a mix of veggies and I top it with Trader Joe’s Asian Style Spicy Peanut Vinaigrette and Soy Sauce.
I have been making some homemade bagels lately and I am in love with them, they are super easy to make. I wanted to make a super fast lunch so I spread some pizza sauce and mozzarella on top and threw them in the oven for about 10 minutes to let the cheese melt.
For a snack, I had hummus and some pita chips after I finished the pita chips I cut up some mini bell peppers and dipped that in hummus.
For breakfast I had these no bake 6 ingredient energy balls that I made the night before
I had to make a quick lunch, and we didn’t have much food in the house this day because we did not go grocery shopping this week. We just tried to eat up what we had left in our house. I just heated up a bowl of rice and topped it with Trader Joe’s Asian Style Spicy Peanut Vinaigrette and Soy Sauce.
